New Restaurant to Open in Eureka

Gibby's restaurant owners from St. Clair, MO, are remodeling the former location operated as a Rich & Charlie's restaurant in Eureka.

Creators of the Libby’s jingle indicate it reminds families about the joys of gathering around meal tables for good conversation, good times and good food.

Next month in , a similar, new jingle can be used for hungry customers gathering at a new food restaurant scheduled to be open around Dec. 1 at 108C Hilltop Village:  If it says Gibby's, Gibby's, Gibby's...

Jeff Geiser, representing Gibby’s, applied for a full liquor and Sunday full liquor at Tuesday's Eureka board of aldermen meeting. He told the aldermen most of their intended liquor sales would be beer and wine, although they will have the makings of a more extended bar.

Geiser, a graduate, said he has been in the restaurant business for the past 15 years, stemming from a background in Cecil Whittaker's that started when he was in college. He said his brothers, Tony and Josh, as well as everyone's wives help with the business "all the way around."

The Geiser brothers opened Gibby's in St. Clair last fall. They also own Cecil Whittaker's in Washington.

"The restaurant's named after the middle name of our grandfather, Harry Gilbert Wade, whose nickname was Gibby," said Geiser. Wade died in 1994.

He said the motiff and atmosphere at the new Gibby's restaurant will be "laid back and toned down," stating that they are attempting to purchase Eureka High uniforms for decorating.

"One of our fun things is a large burger menu, including a 1.5-pound burger challenge called a 'Great Gibby.' If customers eat it all in one seating, they get a hat and their photo taken to place on our wall. In a year and a half in St. Clair, only about 120 people have managed to finish one," Geiser said. "The burger is so big, it can actually feed my whole family."

Geiser said they also plan to deliver orders.
