Chimi's Fresh Mex Welcomed by Chamber

West St. Louis County Chamber of Commerce members held an official ribbon cutting Thursday at Chimi's Fresh Mex restaurant in Wildwood.

Nearly 30 fellow business peers met at the new Chimi's Fresh Mex restaurant in Wildwood on Thursday morning to officially christened its location and to welcome the staff to the community through a West St. Louis County Chamber of Commerce ribbon cutting ceremony.

Luis Sanchez, general manager and one of the restaurant's owners, said business is getting better every day. The staff graciously and expeditiously served all the chamber members after the ceremony.

"This ribbon cutting was a great turnout. So many tasted a wonderful lunch and saw the amazing service," said Lori Kelling, chamber president.

Mayor Tim Woerther said it was encouraging to see a new restaurant open, and that he had noticed the difference in how busy the large parking lot outside of the restaurant has become on weekend nights.

Sanchez said as more people come to try their expansive menu, they are getting positive feedback about their authentic cuisine. "We've added more workers now, and that's enabled us to improve our service, so customers seemed pleased all the way around."

He said people also are starting to reserve the middle portion of the restaurant for celebrations during week nights.
